Every toddler I have encountered loves muffins. Not every toddler loves vegetables, including, my oldest son, Ryder. When Ryder was a baby, first starting with finger foods, he loved muffins. I could give him anything in muffin form and he would gobble it up. Before he turned one, he couldn’t tolerate eggs. Insisting that my baby eat a paleo diet, I wanted to create a muffin that was sweet, tasty and full of vegetables. Ryder went to a nut free daycare at the time and I just couldn’t find many recipes that were paleo, egg free and nut free that I felt comfortable giving my baby/almost toddler. For the last couple of months, my favorite milk has been cashew milk. It’s so creamy and delicious. If you have a high speed blender, like the Vitamix, you don’t have to worry about having a nut milk bag or even soaking the cashews (if you drink the milk often, or your stomach is sensitive, you may still want to soak the cashews for at least two hours anyway for better digestion. This is a great article on soaking nuts and seeds.
It feels a little silly considering this a recipe since it’s so easy, but I remember a time when I didn’t even know cashew milk was a thing so I wanted to share it. I like my cashew milk plain. Because I like it in my coffee and I don’t like my coffee sweet, and I also use it in other cooking adventures, like scrambled eggs, I don’t sweeten my milk or add any vanilla, but feel free to add those if you would like. Since moving back to crunchy land, southern California, in late 2008, I have tried to focus on eating healthy. I was about 50 pounds more than my standard non post pregnancy body and determined to lose weight. I hated diets and never did well with them. I did get into hiking and high protein eating when I moved back, but knew nothing about the paleo diet. After losing about 30 or 40 pounds, I started to focus on health more than weight. I dabbled a little in the raw food life and was super intrigued with eating food to nourish and cooking (or preparing) food using only ingredients that provided nutritional value. I did a raw food cleanse for three weeks at one point. I noticed my psoriasis improved tremendously. Though I didn’t feel this amazing feeling you are supposed to feel.
