For the last couple of months, my favorite milk has been cashew milk. It’s so creamy and delicious. If you have a high speed blender, like the Vitamix, you don’t have to worry about having a nut milk bag or even soaking the cashews (if you drink the milk often, or your stomach is sensitive, you may still want to soak the cashews for at least two hours anyway for better digestion. It feels a little silly considering this a recipe since it’s so easy, but I remember a time when I didn’t even know cashew milk was a thing so I wanted to share it. I like my cashew milk plain. Because I like it in my coffee and I don’t like my coffee sweet, and I also use it in other cooking adventures, like scrambled eggs, I don’t sweeten my milk or add any vanilla, but feel free to add those if you would like.
I have made this milk using a 1:2 or a 1:3 ratio of cashews to water for coffee creamer and it works, but I found the best creamer, and what I use daily, is to add a tablespoon and a half of coconut oil per cup of water before blending. Works like a dream. With my Vitamix, the milk blends to be creamy with the oil and I find it doesn’t clump up after it’s been in the refrigerator, but I did have that problem with the Ninja blender I used for many years (I’ll post about my Ninja vs. Vitamix at some point).
I make this full recipe every week, but feel free to cut the recipe in half or double as you need.
Figuring It Out Tip: a lot of smoothie recipes call for almond milk. I never have almond milk on hand because it generally requires too much planning. If I still want a smoothie in a recipe and I don’t have any pre-made cashew milk or almond milk, I just add however much milk a recipe calls for in water and 1/4 the amount of water in cashews. And I add all the other ingredients and blend like normal. So if a recipe calls for 1 cup almond milk, I will add 1/4 cup cashews and 1 cup of water.

- 1 cup cashews (I get mine from Trader Joe's)
- 4 cups water
Add water and cashews to high speed blender and blend on high for one minute.
The milk may be a little on the warm side after blending, so if you need it cold, plan to refrigerate for a little bit.
